Webster Cook Nook: Sour Cream Pancakes

Okay, so this is a big family favorite. Whenever we can't think of anything fancy for dinner (yes, we eat pancakes for dinner), we turn to this easy and delicious masterpiece.


I can't take credit for this recipe, however. It's actually the recipe of a dear friend of ours. If she only knew how often we use it...


The key ingredient is a bit outside the norm for pancakes: sour cream. (Hence the name.) But it's not what you think. When you bite into the pancake, you don't get a creamy glob of sour cream, but rather an addictive flavor that actually makes the pancakes taste more like a dessert.


When my older brother tasted them for the first time, he asked me for the recipe. When I told him the key ingredient is sour cream, he made a face. "If I had known that, I definitely wouldn't have even tried them. But they're SO GOOD! How is that possible??"


Oh... it's possible...


Anyhoo, I hope you give these pancakes a try - you won't be sorry!


Ingredients

  • 2 cups flour

  • 1/4 cup sugar

  • 4 tsp. baking powder

  • 1/2 tsp. salt

  • 1 1/2 cups milk

  • 2 eggs

  • 1 cup (8 oz.) sour cream

  • 1/3 cup butter or margarine (melted)

Directions


Combine flour, sugar, baking powder and salt.


In another bowl, beat the eggs. Add milk, sour cream and butter. Mix well. Stir into dry ingredients until just blended.


Pour batter by 1/4 cupfuls onto a greased hot griddle. Flip when bubbles form on top of pancakes. Cook until second side is golden brown.


That's it! Whether you eat it for breakfast, lunch, dinner... No judgment here!
